Why do people constantly criticize/badmouth Cindy McCain?

I think you hit on some good reasons. I think the bottom line is, when people don't know how to explain the positions of, or problems with, their own candidate - they just start bashing people, including the family members of the opposition. It's weird. For me, it's an obvious sign of lack of character and education, and/or desperation.
